Reflecting on the previous exhibition, delegations and exhibitors from over 30 countries and regions, including Australia, Austria, Belgium, Canada, Cyprus, Denmark, France, Germany, Indonesia, Italy, Japan, Korea, Malaysia, Netherlands, Peru, Russia, Saudi Arabia, Singapore, Spain, Sri Lanka, Switzerland, and the United States, participated. The show attracted professional visitors from various fields such as food, hotels, catering, fresh produce, coffee, bakery, beverages, prepared foods, bars, clubs, supermarkets, retail, and franchise chains. This robust participation brought substantial confidence and momentum to the continuous and stable development of the food and catering industry.

中国市场潜力巨大
2023年底,全球烘焙食品市场规模超过了4400亿美元。数据显示,中国烘焙食品行业市场规模预计保持10%左右的增长率,2025年市场规模将达3518亿元。而中国人均烘焙食品消费量仅为7.7千克,与欧美等烘焙食品消费主要国家(或地区)仍有较大差距。中国烘焙食品消费市场还有很大增量空间,市场消费需求旺盛。
在第二十六届FHC上海环球食品展上,来自全球30个国家及地区的展团及展商共赴食饮盛会,链接庞大的中国市场。其中不乏德国、法国、美国、欧盟、日本、澳大利亚等,其烘焙食品生产及消费份额在全球处于地位。
德国的面包文化冠绝全球,FHC2023德国展团带来了供应各大商超零售的手工面包、冷冻面团等,也包括乳制品、油脂(黄油)、奶酪等烘培原材料。日本展团则展出了更多令人耳目一新的包装烘焙食品、烘焙零食、饼干、日式糕点等。

打造「六边形」品牌
产品始终是核心竞争力。随着年轻一代消费者成为市场主力,烘焙产品趋于个性化、健康化,购买渠道更加多元。
从消费偏好来看,除传统西式烘焙食品,越来越多地域烘焙食品和新中式糕点受到关注,国潮和带动情绪价值的造型甜品频频“出圈”,口味和颜值兼具。同时,减糖、低GI、天然有机等健康标签也出现在烘焙食品中,满足了消费者对高品质生活的追求。
从销售渠道来看,线下商超、便利店、烘焙品牌店是主要购买渠道。而冷链技术和物流的发展,将冷冻烘焙、冷冻面团带入商超及便利店,也将成品蛋糕、甜点便捷地送入消费者的手中,不少品牌也开始铺设线上渠道,设置线上产品,为消费者带来更丰富的选择。

FHC2024将迎来第二十五届FHC中国国际烹饪艺术比赛,FHC中国国际甜品烘焙比赛,FHC上海国际厨艺锦标赛,来自全球数百位精英选手切磋中西式烘焙技艺,以精巧创意和高超技法创作出一道道精美作品,呈现烘焙食品的更多可能。

2023年,国家出台陆续出台了《关于培育传统优势食品产区和地方特色食品产业的指导意见》、《食品安全标准与监测评估“十四五”规划》、《城市一刻钟便民生活圈建设指南》等政策,鼓励烘焙食品行业的发展与创新。同时,我国成品糖、烘焙面粉、乳制品、油脂等烘焙产业上游原料产量及供应稳定增长,为烘焙行业创新与发展提供了良好土壤。
另一方面,在快速发展迭代的市场步调中,烘焙市场的竞争也愈加激烈。传统品牌尝试跨界联名、融入潮流文化、布局线上渠道等方式,拥抱变化,适应市场。更有许多新兴品牌应运而生,将瑞士卷、芝士蛋糕、蛋黄酥等经典品类深度挖掘和创新,成就了一条“大单品”之路,取得了可喜的市场表现。
